Real Cider
When we say real cider we are talking about cider that is made from freshly pressed apples, undiluted or fortified. The apples may be grown as cider fruit or can be culinary apples or a mixture of the two. In Asturias, Spain they have a type of quality restriction which requires that all the apples come from a limited list of cider apples but elsewhere this is not considered necessary. One thing we frown upon though, is the use of concentrated apple juice. Another would be chaptalisation, an industrial process whuich involves adding sugar to increase the alcoholic strength and then diluting the cider down again afterwards. A good craft cider will taste ten times better than anything deliberately concocted for the mass market.
